I’m a health professional and a teacher. I’ve always loved science and wanted to make a real difference in people’s health, which led me to nutrition science and becoming a Registered Dietitian. I enjoyed one‑on‑one counseling as a hospital dietitian, but I soon realized I loved teaching and training future dietitians even more.
My practical experience began with a Dietetic Internship at Rush in Chicago, followed by work as a clinical dietitian and outpatient educator. I’m now a Professor of Nutrition at Benedictine University, where I’ve taught for over 30 years. Over that time, I’ve helped teach thousands of undergraduate and graduate students. Together, my colleagues and I have built an “army” of nutrition professionals who can help far more people than any one of us could alone.
In a world full of health myths and misinformation, Registered Dietitians are trained to be evidence‑based. I’ve conducted or supervised nearly 90 research studies, advised almost 200 student researchers, secured $310K in research grants, and delivered more than 40 professional presentations.
Through this website and my blog, I’m coming full circle—back to educating individuals, but now with the reach that technology allows. I’m excited to walk this wellness journey with you.

More About Me
Who else am I? I think being a Mom comes to mind first - of two beautiful people, one a teenager and the other a young adult now forging her way in the world. I am also a dog mom of our sweet 8 year-old hound “puppy” who thinks he is my baby. I am a wife, now married 26 years. One of my husband’s favorite sayings to me is from Princess Bride: “As you wish” - which tells you a lot about our dynamics. He is my ever-loving support and rock when I need it. I am blessed to be a daughter of the most loving Mom and sister of five truly remarkable siblings. I have an amazing sister-in-law and cousins, along with some long-time and new friends I cherish. I am incredibly fortunate to have this band of loving people with me on my journey..
